And so this is Christmas… and my last post for the year. Usually I do the year in review but it is just far too hectic as TIFFIN central with a new kitchen imminent, cramped conditions and only one computer to share between the two of us. So instead, I thought I’d get your sugar frenzy started and point you in the direction of Brisbane’s Biggest Gingerbread House.
You may be thinking, how many giant gingerbread houses can there possibly be in Brisbane? Let me tell you, there are quite a few dotted around the major hotels in the city with stiff competition between pastry chefs. In this instance, Chef Tammy Cole from Rydges South Bank reigns supreme in Christmas kitchen stadium.
A Spoonful Of Sugar (or 10)
Using 170kg of gingerbread and 100kg of sugar in the royal icing, it was assembled in the hotel’s foyer. Here’s a great time-lapse video showing construction.
The gingerbread house was created to support the work of the Salvation Army who are always busy but doubly so at Christmas when many people are in need of their services. You can help out by visiting Rydges and dropping off a Christmas gift for the Salvos to distribute. Then, take a selfie in front of the giant gingerbread house and share it so you can spread the word.
Visit the Bacchus (Rydges South Bank’s premiere restaurant) website, if you would like the recipe for a gingerbread house on a somewhat smaller scale.

That’s a wrap on TIFFIN for another year. Thanks for your continued support and all of the wonderful comments and suggestions you make. I’ll be taking a break for a few weeks and will be back on board in January. See you then.
Hope your kitchen is ready for the festivities! Thank you for all your wonderful blogs throughout the year. I am looking forward to moving to Brisbane in the new year and visiting your recommendations. ☺☺
And thanks to you for all of your comments and encouragement. Brisbane is waiting with open arms! xxx
Snap to the biggest Gingerbread House in Brisbane. Best wishes to you and your nearest and dearest for the festive season and 2016!

Well it wasn’t too bad was it Sherry? Today is lovely but we both know the humidity can’t be far away.
Hope your kitchen gets completed before Christmas. Wishing you an amazing 2016 🙂
Nearly there. Operational but more work to do in the pantry (which is what started it in the first place!)
Hi Fiona. That is one hella gingerbread house. Love the video.
If you can believe it, there was one nearly as big at the Sofitel. ‘Gingerbread Wars’
Hmmmm…. Who does one ask to get a giant gingerbread house in Canberra, I wonder? Perhaps the foodies might be up to the challenge. Ha! Hope you are enjoying all the fun, food and festivities of the season, see you in 2016. 🙂
It would make a great end of year blogger get together activity. You’ll have to get Richard Tuffin on to it – I know he’s big on getting bloggers together.
Wow, that really does look amazing! I hope you had a wonderful Christmas, albeit without a kitchen! I look forward to to seeing your new abode in 2016 🙂 have a wonderful New Year, I’m off camping for a week, so see you in 2016!

We had a decent enough working kitchen, if a little rough around the edges. I do feel like I’m in someone else’s house though!
Sorry I missed this one pre xmas… all the best for a cracker of a 2016!
Thanks Liz!
