Brisbane’s Biggest Gingerbread House – Snap A Selfie For The Salvos

And so this is Christmas… and my last post for the year. Usually I do the year in review but it is just far too hectic as TIFFIN central with a new kitchen imminent, cramped conditions and only one computer to share between the two of us. So instead, I thought I’d get your sugar frenzy started and point you in the direction of Brisbane’s Biggest Gingerbread House.

You may be thinking, how many giant gingerbread houses can there possibly be in Brisbane? Let me tell you, there are quite a few dotted around the major hotels in the city with stiff competition between pastry chefs. In this instance, Chef Tammy Cole from Rydges South Bank reigns supreme in Christmas kitchen stadium.

Using 170kg of gingerbread and 100kg of sugar in the royal icing, it was assembled in the hotel’s foyer. Here’s a great time-lapse video showing construction.

The gingerbread house was created to support the work of the Salvation Army who are always busy but doubly so at Christmas when many people are in need of their services.  You can help out by visiting Rydges and dropping off a Christmas gift for the Salvos to distribute. Then, take a selfie in front of the giant gingerbread house and share it so you can spread the word.
